If you are talking Family Tree Maker 2012 (FTM2012) I would add a new NAME tag by going to the person and adding a second/additional "fact" of name. Then enter the Given name and Surname for the person. I would not create a new tag such as "Italian Given Name". I add a second/additional name for most of my relatives all the time. I do this for Norwegian spellings (birth name) as primary name, then if/when they move to a place that the name is hard to use I make a second/additional NAME tag/label. I also do this for married names and "nick names". I never use AKA (this is my standard, that others may not agree with) always an additional NAME tag.
EDIT: You can add/create a new tag/label if you realy nead to by using the "new" button on the add fact dialog. I would not do this but it is your Database, so go ahead if you want.
