The "Family" view at Ancestry.com (or on the iPad or iPhone) is great. I wish there was a similar display option in FTM, and I'm not talking about reports, as you are.
In the Publish workspace, the closest thing to what you have on AMT is the extended family chart. I think you've already discovered that FTM can't do exactly what you have in mind. You can send in an a request asking that your concept be added to FTM in the future. You might also check into some other software to see if the idea is already supported elsewhere. You could also just create your own chart using something like Adobe Illustrator, Corel Draw, or Inkscape (free). Org chart software would probably work as well.
